How Old Is That Apple? Why Australian Apples Can Stay Crisp for Months

Apples can be stored for months before reaching shops, and growers use controlled-atmosphere rooms to slow ripening. In these rooms, operators lower oxygen and manage carbon dioxide while keeping temperatures cool. The fruit stays alive but changes more slowly. Storage conditions, variety and harvest timing all affect texture and eating quality. Shoppers cannot tell harvest dates from an apple's appearance, and an origin label does not reveal when it was picked.

What’s the difference between green, yellow and red capsicums? It’s more than what you see

Green, yellow, orange and red capsicums are all the same fruit, picked at different stages of ripening. Colour changes as chlorophyll breaks down and carotenoid pigments take its place. Green capsicums are firm and slightly bitter, while red capsicums are the sweetest and softest when cooked. Orange and red capsicums contain the most vitamin C and beta-carotene, and red capsicums have the most capsanthin. Cooking increases carotenoid availability but reduces vitamin C, so eating a mix of raw and cooked capsicums of different colours is recommended.
